Coconut Cream PieTaste And See NZNov 18, 20181 min readYou will Need Base2 cups rolled oats or qunioa flakes 1 cup coconut desicated 1/2 cup dates soaked in 1/2 cup water for 10 minutes Filling 400 mls Coconut cream 1 tsp Vanilla 1/4 cup potato flour Topping 400 mls blackcurrant concentrate 4 tbs potato flour 200 mls water 2 cups blueberries Method 1. Blend all base ingredients together and press into a lined pie dish. if crumbly and some more water2. Bake for 15 - 20 minutes until lightly browned 3. place filling ingredients into a pot and bring to a low boil, stur until thick4. Pour into baked pie base and place in fridge till set 5. Mix the 4 tbs potato four and 200 mls water 6. bring concentrate to the boil and add the potato flour water mix, stur until thick. 7. Add blue berries, and place on top of the filling8. Refrigerate till set
