Lentil And Pumpkin Casserole




What you will need

2 Cups Lentils 1 tbs Basil

16 Cups Water 1 tsp Salt

2 Large Onions Chopped 1 tbs Vege Stock

3 Cloves Garlic Chopped 200g Tomato Paste

2 tbs Cumin 400g Tomato Crushed


Instructions

1. Bring Lentils and 8 cups of water to the boil, remove water then add another 8 cups of water and bring to the boil again.


2. When lentils are nearly cooked add all other ingredients and cook for 10 minutes.


3. You may need to add a little more water, it depends how thick you like your lentils. If they need thickening add a little potatoe flour and stir until thick.


4. Serve as is or you can also cook up some pumpkin or kumara, pop the cooked lentis into a serving dish and put the mashed pumpkin or kumara on top.


Fun Fact When you eat onions you can get rid or onion breath by eating parsley.
